Adapted from Delish's Keto Mac & Cheese, this savory low carb favorite works as a hidden veggie side or a vegetarian main. It is sure to satisfy a crowd, and as a side, serves 8.

Ingredients

  • 2 medium heads <strong>Cauliflower</strong> 
  • <strong>Olive Oil</strong> 
  • 1 cup <strong>Almond Milk</strong> 
  • 6 oz Cream Cheese 
  • 4 cups Shredded Cheddar Cheese 
  • 2 cups Shredded Mozzarella Cheese 
  • 1 tbsp Hot Sauce 
  • Black Pepper 

Toppings

  • <strong>½</strong> cup Walnuts, chopped 
  • <strong>¼</strong> cup Parmesan Cheese 
  • 2 tbsp Olive Oil 
  • Parsley, chopped to garnish
