Slice pickle spears, red bell pepper, English cucumber, and green onion into thin strips. Set aside.
Lay a slice of deli meat on a flat surface.
Spread 1-2 tbsp of cream cheese evenly over the slice.
Lay any desired combination of vegetables in the center of the ham slice and roll up.
Slice into equal parts. Keep refrigerated until ready to serve.
