Ingredients

  • 3 LB
    Boneless pork shoulder
     
  • 2 tsp
    Ground cumin
     
  • 2 tsp
    Garlic powder
     
  • 2 tsp
    Onion powder
     
  • 2 tsp
    Paprika
     
  • 1 tsp
    Ground black pepper
     
  • 1.5 tsp
    Salt
     
  • 2 tbsp
    Olive oil
     
  • 1 cup
    Stock
     
  • 12 oz
    Diet Coke/Soda
     Optional

Instructions

  1. Add pork shoulder to slow-cooker.

  2. In a medium bowl, combine cumin, garlic powder, onion powder, paprika, salt, pepper and olive oil until it comes together into a thick paste. Spread it all over the pork shoulder. Let sit for 10-15 min.

  3. Pour the stock and diet Coke into the crockpot and place marinated pork shoulder gently inside.

  4. Cook on high heat setting for 5-6 hrs until fork tender.

  5. When ready, shred the pork shoulder apart with two forks and serve. Goes well with cauliflower mac and cheese and a side of vegetables!

  • Look for cheaper cuts of meat, like bone-in, sales on skinless/deboned, etc. Stock up in a freezer when on sale.
  • Build your spice rack--find many common spices at your local dollar store.
  • Batch cook and store in freezer.
  • Use pulled pork on salads, taco bowls, lettuce wraps, and more.
