Add pork shoulder to slow-cooker.
In a medium bowl, combine cumin, garlic powder, onion powder, paprika, salt, pepper and olive oil until it comes together into a thick paste. Spread it all over the pork shoulder. Let sit for 10-15 min.
Pour the stock and diet Coke into the crockpot and place marinated pork shoulder gently inside.
Cook on high heat setting for 5-6 hrs until fork tender.
When ready, shred the pork shoulder apart with two forks and serve. Goes well with cauliflower mac and cheese and a side of vegetables!
